Our approach is simple and rooted in nature. With farm-fresh, local ingredients, our seasonally focused menus blend mindful eating with the culinary bounty of the Catskills. Bittersweet’s dining spaces invite you to kick off your day with a nourishing breakfast, refuel for activities and adventures during lunch,  and unwind with a sunset cocktail and dinner on our wraparound porch. The Holidays at Hemlock

  • This holiday season, skip the stress and join us for a beautifully crafted Christmas Dinner. Our culinary team has put together a festive, comfort-forward menu featuring Prime Rib with beef jus, classic holiday sides like candied yams and garlic pommes purée, and your choice of homemade pumpkin or apple pie.

    Whether you’re gathering with family, meeting friends, or just treating yourself, we invite our guests and neighbors to relax, indulge, and let us handle the cooking. Make your Christmas delicious, effortless, and memorable with us this year.

  • We are making a splash this NYE and hope you will join us. Whether staying as an overnight guest or joining as a neighbor, we look forward to celebrating with you. Menu and details to follow.

  • Finish 2025 on a high note and welcome 2026 with us at our New Year’s Eve Pool Party! A glowing celebration where music, laughter and intention fill the space with the exciting energy of new beginnings. Watch the ball drop from the hot tub while we take our serene indoor pool environment and turn up the energy. Upbeat tunes, mocktails or cocktails and all around good vibes will be available poolside for those in attendance. 

    For overnight guests, this party is part of your stay. If you live in the area and want to join, our NYE celebration package includes spa amenities pass for the full day; a complimentary craft cocktail or mocktail and NYE toast.  Make a splash and dance the night away with us. Please call ahead to reserve one of our limited spots or inquire about one of our cozy rooms and save yourself the late night drive home.
